It would be celeri-rave dauphinoise if it existed as a thing. Celeriac should be cut into thin julienne and mixed with mayonnaise as a salad item. Or thrown on the compost heap.

I like to mix Celeriac with Potatoes (70/30 potatoes) when i make dauphinoise. A little garlic, thinly sliced shallots with cream and plenty of seasoning. A great accompaniment to a game pie or slow roasted beef cheeks.
