I am unable to watch the live stream on Sunday. Is it possible to record it, and if so, how do I do it ?

I currently run a LAN cable from my router into the back of my desktop computer. I than connect the desk top to my tv by HDMI cable. I can then watch the game ( having first subscribed) on. a 50” tv. That is the set up. But can I record it and watch later ?

I haven't found a way. Similar set up to you. On a few occasions I have put it on pause before kick off and lost it when I could watch later (Tuesday for one).

You can watch it through ifollow the day after. But you’d probably know the score, unless you were in the sticks, alone with no media at all.

If you have paid for the match go on to the official site and click on the ifollow tab and then "latest videos".
Not sure how quickly this comes on but I think you can go back and watch any match you've paid for.
There are also highlights options

Download a program called OBS and you can record it from in there.

Never tried it, but if you’re running it through a desktop PC, could you not just record the screen? There’s loads of screen recording software out there for free or there is even one built in to Windows 10 (just press windows key and "G").

You don't have to have paid, as long as you are registered.
